I am a big dessert eater. When I switched my kitchen to gluten free for the sake of my two celiac boys, I was bummed because I love desserts especially apple desserts. So I made it my mission to find wonderful gluten free substitutes. So here is new one. I got this recipe from Betty Crocker.com.
Gluten Free Apple Swirl Coffee Cake
Ingredients
4 Eggs
3/4 cup milk
1/2 cup butter, melted
2 teaspoons vanilla
1 box of Bisquick Gluten Free Mix (3 cups)
2/3 cup granulated sugar
1 can (21 oz) of fruit pie filling, I used apple
Glaze:
1 cup powdered sugar
2 tablespoons milk
Prep:
Heat oven to 375 degrees. Grease your pan. I used a 9 x 13. I think I will use two small ones next time and freeze one.
In a large bowl, mix first six ingredients until blended. Spread 2/3 of batter (about 2 1/2 cups) in the pan. If you are using smaller pans about 1/3 of batter in each pan.
Spread pie filling over batter. Drop remaining batter by tablespoons onto pie filling.
Bake 20-25 minutes until golden brown. Meanwhile mix glaze ingredients together. Drizzle over warm coffee cake.
